Chicken, cheese, rocket and avocado toastie

high fibre, protein, anti-oxidant rich, gluten free (if GF bread is used)
Goodness provided: Healthy and wholesome doesn't need to be cordon bleu. This yummy sandwich can be put together with some cooked chicken leftovers, bread, cheese, avocado and a good handful of greens like rocket or spinach.
2 slices of wholegrain bread
slice of cheese
palm serve of cooked chicken (can use leftovers or pick up a BBQ chicken)
good handful of dark leafy greens like rocket or baby spinach
1. Scrape some margarine on two slices of wholegrain bread
2. On the unbuttered side start with the slice of cheese, then add the avocado, rocket and the cooked chicken.
3. Place the other unbuttered side face down and then cook the sandwich in a toastie machine until the bread is golden and the cheese has melted.
