Lemon parsley gremolata

Loss of taste is one of the most debilitating side-effects that can occur with head and neck type cancer treatments. This gremolata recipe adds a zingy, garlic flavour to food that also hits with a big anti-oxidant boost.
1 cup of chopped flat-leaf parsley
juice of 1 lemon (1-2 tbsp)
1/2 tsp of salt
3 tsp grated lemon rind
2 small cloves of garlic crushed
1/3 cup of olive oil
Place all ingredients into a blender or food processor. Blend together for 30-60 seconds. The mixture should be mixed together but still have some texture. If the mixture is not mixing well you can add a teaspoon or so of cold water.
Store in the fridge and add to meat, chicken or vegetarian meat alternates for a flavour boost
