Wholesome muesli bliss ball

Cooking Time: 10 minutes + 1 hour refrigeration Serves: 8-10 balls

These wholesome, no-bake muesli balls are a favourite in my house. Best stored in the freezer, they serve as a wholesome snack when energy levels need a boost

Ingredients 

2 cups of rolled oats
1 cup of natural muesli
1 cup of pitted dates
1 cup of cashew nuts
1 cup of pepitas
pinch salt
2 tbsp melted coconut oil
1/2 cup of peanut butter
1/4 cup of rice syrup
1/4 cup of honey

Method

1. Soak dates in hot water for 10 minutes, then drain

2. Blitz dates in a food processor and then add in the remaining ingredients

3. Lightly blitz the remaining ingredients and then combine it by hand. The ingredients should be just chopped, with nuts and seeds relatively whole

4. Spoon 1 tbsp of the mixture and roll into a ball. Place onto a large tray covered with a layer of baking paper.

5. Cover the mixture and freeze

6. These balls are best stored and then enjoyed straight from the freezer, still cold
